Corned Beef Hash Patties

Ingredients
  • Chef-mate Corned Beef Hash -- 2 cups
  • Eggs, beaten -- 2 ea
  • Breadcrumbs, unseasoned -- ½ cup
  • Scallions, fresh, sliced, optional -- 3 ea
  • Oil, neutral -- 3 Tbps

    In a large bowl, mix together the corned beef hash, eggs, breadcrumbs, and scallion.

    Scoop into 1.5 oz patties and flatten slightly. Reserve on sheet pan.

    Heat oil in a large skillet over medium heat.

    Cook patties 3-5 minutes per side, until golden brown. Transfer to paper towel lined plate until ready to serve.
