Chorizo, raw, casing removed -- 2 lbs

Flour tortillas, 6 inch, warmed -- 24 each

Radishes, fresh, sliced -- 1 bunch

Onion, white, small diced -- 1 ½ cups

Cilantro, fresh, chiffonade -- 1 cup

Limes, cut into small wedges -- 24 wedges

1For the Queso Fundido: Preheat oven to 350°F. Heat a 12-inch cast iron skillet over medium-high heat.

2Once hot, add the chorizo. Cook, breaking up into small pieces, until browned and cooked through. Drain excess fat.
