Pumpkin Bolognese Sauce
Ingredients

Oil, vegetable -- 2 Tbsp

Ground beef -- 1 lb

Ground pork -- 1/2 lb

Pumpkin, small dice -- 1/2 cup

Celery, small dice -- 1/2 cup

Onion, small dice -- 1 cup

White wine -- 1 cup

Libby's 100% Pure Pumpkin -- 2 cup

Minor's Classical Reductions Reduced Chicken Stock -- 2 cup

Heavy cream -- 1 cup

Parmesan cheese -- 1/4 cup

Salt -- 2 Tbsp
Preparation

1Heat oil in a large pot, add beef and pork, cook until browned, remove and reserve.

2Add diced pumpkin, celery and onion to pan and cook until soft, about 2-3 minutes.

3Deglaze with wine, add pumpkin puree and chicken stock and stir to combine.

4Add meat back to pan and cook for 30 minutes over low heat.

5Add cream, cheese and salt.
Serving Suggestions
Serve with zucchini noodles or cooked pasta.
