Ingredients
  • Corn kernels -- 2 Tbsp
  • Chili powder -- 1/2 tsp
  • 1 Tbsp Mayonnaise -- 1 Tbsp
  • Cotija cheese -- 1 tsp
  • Stouffer’s Stuffed Peppers, cooked, hot -- 1 ea
Preparation

    Quickly sauté corn with chili powder.

    In mixing bowl, stir together sautéed corn, mayonnaise, and Cotija.

    Place Stuffed Pepper and sauce on plate.
  • 4
    Top pepper with corn mixture.
Serving Suggestion/Variation

Top with additional Cotija cheese and garnish with chopped cilantro and lime juice.
