Creamed Spinach with Mushrooms, Bacon, and Green Onions

Pork bacon, raw -- 12 oz

Button mushroom, thin sliced -- 1 qt

Scallions, sliced on a bias -- 1 cup

Stouffer's Creamed Spinach 4 x 96 ounces - pouch, prepared -- 1 pouch

Cheese, mozzarella, part skim milk, shredded * -- 2 cup
Preparation

1In a saucepot, heat bacon, and render over medium heat until bacon is crispy. Remove crispy bacon and reserve. Sauté mushrooms and Scallions, 2 minutes.

2Add Creamed Spinach and crispy bacon. Gentle fold constantly until hot and well blended.

3Place mixture into a baking pan. Top with cheese. Bake in a 400°F conventional oven for 20 minutes.
* Variation:
Use 2 cups of shredded cheese of choice.
