Vietnamese Chicken Wing Sauce and Marinade
Ingredients

Maggi Seasoning 6 x 27 fluid ounces, 1/4 cup -- 2 oz

Water, 1/4 cup -- 2 oz

Fish sauce, 1/4 cup -- 2 oz

Garlic, cloves, fresh, 8 each, minced -- 1.5 oz

Granulated sugar, 1/2 cup -- 4 oz

Chicken wing -- 1 lb
Preparation

1Thoroughly whisk together Maggi Seasoning, water, fish sauce, garlic and sugar in a bowl.

2Reserve half of the sauce/marinade for reducing later.

3Use the remaining half as a marinade. Marinate chicken 6- 24 hours. Drain wings. Discard excess marinade.

4Cook wings as desired.

5Reduce reserved marinade by 1/3-1/2 to a syrup like consistency.

6Toss chicken wings in reduced sauce.

7To create a version of this dish in a Sichuan style and fresh chiles.
