Lemon Arugula Pesto
Ingredients

Arugula -- 4 cups

Pine nuts --1/4 cup

Garlic, cloves -- 2 each

Parmesan cheese, grated -- 1/2 cup

Minor's Gluten Free Vegetable Base made with Natural Ingredients-- 2 tsp.

Lemon zest -- 1 tbsp.

Lemon juice, fresh -- 3 tbsp.

Extra virgin olive oil -- 1 1/4 cup
Preparation

1Combine the arugula, pine nuts, garlic, parmesan and vegetable base in a food processer. Process to blend.

2Once a coarse paste has formed and with the processer running add lemon juice and zest, and the olive oil. Process until smooth. Season to taste.
