Ancho Chicken Under A Brick
Ingredients

Chicken, whole -- 3.5 lb

Olive oil -- 0.25 cup

Minor's® Ancho Flavor Concentrate Gluten Free -- 0.25 cup
Preparation

1Wash and pat dry chicken.

2Combine oil and Ancho Flavor Concentrate.

3Rub chicken on all sides with Ancho mixture.

4Place in a large sauté pan, place a heavy object such as a brick or pot on top to weigh the chicken down without smashing.

5Halfway through cooking turn chicken over and repeat with other side.

6Cook until done.
