Apple Mango Salsa
Ingredients

Vegetable oil, 1 cup -- 8 fl.oz

Rice vinegar, 1/2 cup -- 4 fl.oz

Minor's Sautéed Vegetable Base Mirepoix (No Added MSG)* Gluten Free 6 x 1 pound, 2 tsp. -- 12 g

Mango, ripe, peeled, pitted, small diced, 4 cups -- 16 oz

Apples, peeled, cored, small diced, 2 cups -- 9.5 oz

Red bell pepper, small diced, 1 cup -- 4 oz

Red onion, fine diced, 1/2 cup -- 2 oz

Chili pepper, Jalapeño, fine diced, 2 tbsp. -- 1 oz
Preparation

1In a medium bowl, combine vegetable oil, rice vinegar and Sautéed Vegetable Base using a wire whip until well blended.

2Fold in mangoes, apples, red peppers, onion and jalapeno. Chill and hold in refrigerator for service.

3Use on fish, or serve as a garnish.
