Taco Seasoning Mix

Chili powder -- 1/4 cup

Cornstarch -- 4 tsp

Coriander, ground -- 2 tsp

Cayenne pepper -- 1 tsp

Taco Filling

Vegetable oil, blended -- 2 tbsp

Chicken breast, cooked -- 4 lb

Water -- 1-1/2 cups

Minor's Gluten Free Chicken Base made with Natural Ingredients -- 1 tbsp

Taco shells, baked, crispy, corn -- 20 each

Taco Sauce -- 10 oz

Lettuce, field greens, 3 cups, shredded -- 6 oz

Cheddar cheese, sharp, shredded -- 8 oz

Tomatoes, seeded, small diced -- 3/4 cup
Preparation

1Taco seasoning may be made up ahead of time. To prepare, combine chili powder, cumin, salt, cornstarch, paprika, coriander and cayenne pepper in a bowl. Mix with wire whip to combine.

2In a skillet, heat oil. Add chicken and sauté 3-4 minutes. Add water, Chicken Base and taco seasoning. Stir to combine until chicken is well coated. Continue to simmer until liquid is absorbed, about 3-4 minutes.

3If desired, heat taco shells. To assemble tacos, spoon 3 oz chicken filling into each shell. Top with 1/2 oz taco sauce, 1/4 oz lettuce, 1/4 oz cheese and garnish with tomatoes.

4Serve tacos with optional garnishes, such as diced avacados, black beans, pico de gallo and sour cream.
