Harissa Bowl
      Ingredients
                  
    
    - 
        
        Minor‘s® GreenLeaf™ Basil Pesto Gluten Free -- 2 1/2 cup
- 
        
        Lentils, black, cooked -- 1/2 gal.
- 
        
        Cauliflower, riced, cooked -- 1 1/2 qt.
- 
        
        Sweet Potato, diced 1/2 inch stir fried -- 2 1/2 cup
- 
        
        Tomato, cherry, half cut -- 2 cup
- 
        
        Harissa, prepared -- 2 1/2 cup
- 
        
        Onion, red, 1/4 inch dice -- 2 1/2 cup
- 
        
        Pepper, red, 1/4 inch dice -- 2 1/2 cup
- 
        
        Yogurt, plain -- 1 1/4 cup
- 
        
        Cilantro, minced with stem -- 5 Tbsp.
        Preparation

                                            1In a bowl, mix lentil and cauliflower, then hold.

                                            2In a bowl, mix sweet potato, onion, pepper, then hold.
- 
                                            3In a bowl, whisk harissa and yogurt until fully incorporated.
- 
                                            4Garnish with cilantro, vegetables and pesto on lentils.
- 
                                            5Serve lentil bowl cold with cilantro pesto.

            Serve with a variety of vegetables and spices. (Example: cilantro, eggplant, etc.)
