Red Curry Pumpkin Sauce
Ingredients

Oil, vegetable -- 2 Tbsp.

Onion, small diced -- 1/2 cup

Garlic, chopped -- 1 Tbsp.

Cumin, ground -- 1 tsp.

Coriander, ground -- 1 tsp.

Red pepper, flakes -- 1/4 tsp.

Red curry paste -- 2 Tbsp.

Libby's 100% Pure Pumpkin -- 1 cup

Milk, coconut, unsweetened --1 can

Lime juice, fresh -- 2 Tbsp.
Preparation

1In a saucepot, heat oil over medium heat, add onions, garlic, cumin, coriander and red pepper. Cook 3-4 minutes until onions are tender. Stir in curry paste, continue to cook 1 minute.

2Add pumpkin, coconut milk and lime juice, stir to combine.

3Reduce heat to low. Simmer sauce 4-5 minutes until thickened.
Serving Suggestions
Add 1 Tbsp. fresh chopped cilantro.
