Seafood Pasta with Sweet Pumpkin Sauce

Libby's pumpkin puree -- 3/4 cup

Molasses -- 1 Tbsp

Eggs --2 ea

All-purpose flour -- 2 ¼ cups

Semolina flour -- 1/2 cup

Sea salt, 1/2 tsp

All-purpose flour -- for dusting

PUMPKIN SEAFOOD SAUCE

Clams cleaned and grilled -- 1 lb
-
Large prawns, cleaned, tossed in seasoning and grilled -- 1 lb

Garlic minced --1 tbsp
-
Shallots minced --1 tbsp
-
Libby's Pumpkin Puree -- 3 oz
-
Butter, unsalted -- 3 oz
-
White wine --2 oz
-
Orange juice -- 1 oz
-
Seafood stock -- 1 cup
-
Red chili peppers, cut in half lengthwise -- 1/2 ea
-
Cilantro picked -- 1/4 bunch
-
Salt -- to taste
-
Pepper -- to taste
Preparation

2In a small mixing bowl whisk together the egg, pumpkin, molasses, and salt.

3Combine and sift the flours together well and create a well; pour the egg mixture in the well and slowly incorporate into the flour with your hands.

4When a ball starts to form, dust with flour, and knead the dough until it is combined and just starting to become firm.

5Wrap in plastic wrap and allow to rest in a warm spot for at least 30 minutes.

6Roll out and cut into desired shape.

7Cook your pasta until al dente and reserve some pasta water.

8PUMPKIN SEAFOOD SAUCE

9While your pasta is cooking, grill your prawn and clams with salt and pepper ½ way. Set aside.

10In a sauté pan, add butter and shallots until translucent and then add your garlic and chilis. Deglaze the pan with white wine and seafood stock and add in your seafood.

11Season and cook until clams are fully open, add in your pasta, pumpkin puree, and orange juice. Cook until sauce thickens and add in butter.

12Plate and serve. Garnish with cilantro, clams, and prawn.
