Sonoran Brown Gravy
Ingredients

Butter -- 1 oz

Onions, julienne cut -- 8 oz

Green bell peppers, julienne cut -- 4 oz

Red bell peppers, julienne cut -- 4 oz

Button mushrooms, sliced -- 8 oz

Tomatoes, canned with juice, diced -- 36 oz

Trio® Brown Gravy Mix, prepared, warm -- 78 oz

Chipotles in adobo sauce, puréed -- 4 1/4 oz
Preparation

1In a pot, melt butter. Add onions, and green and red bell peppers. Sauté 2–3 minutes. Add mushrooms and sauté another 2–3 minutes.

2Stir in tomatoes and prepared Brown Gravy. Mix until blended.

3Add puréed chipotles; stir to blend. Bring to a simmer.

4Serve warm.
