Tater Tot Hotdish

Ingredients

Oil, neutral -- 2 Tbsp

Onion, yellow, chopped -- 1 ea

Beef, ground -- 1 lb

Chef-mate Country Sausage Gravy -- 3 cups

Salt -- to taste

Pepper -- to taste

Corn, frozen, kernels, thawed -- 2 cups

Green beans, cut, frozen, thawed -- 2 cups

Tater tots, frozen -- 32 oz

Parsley, fresh chopped, optional -- 2 Tbsp
Preparation

1Preheat oven to 350°F.

2In a large skillet, heat oil. Once hot, add onion and cook until translucent, 5-7 minutes.

3Add ground beef to skillet with onion. Cook, breaking up with a wooden spoon, until browned, another 5-7 minutes. Stir in gravy and adjust seasoning.

4Place frozen corn and green beans in an even layer in the bottom of a cast iron skillet.

5Pour the sausage gravy mixture on top of the vegetables and spread out to even.

6Top with tater tots in a circular shape, covering the whole surface of the skillet.

7Bake until bubbly and the tater tots are golden, about 45-55 minutes.

8Top with chopped fresh parsley, if desired.
