Thai Shrimp Kebabs
Ingredients

Oil, vegetable -- 1 Tbsp

Garlic, minced -- 1 Tbsp

Ginger, minced -- 1 Tbsp

Scallions, sliced -- 1/2 cup

Minor’s® Sweet & Sour Sauce RTU -- 1/2 gal

Green chile peppers, fire-roasted, diced -- 1/4 cup

Lime juice -- 1 Tbsp

Soy sauce -- 1 Tbsp

Peanut butter -- 1/4 cup

Sesame oil -- 1 Tbsp

Shrimp, medium, raw -- 5 lb
Preparation

1In a sauté pan, heat oil and sauté garlic, ginger, and scallions 4–5 minutes, stirring frequently.

2Add sweet & sour sauce, green chiles, lime juice, soy sauce, peanut butter, and sesame oil.

3Cook sauce, stirring, until peanut butter is melted and sauce is well-blended. Cool.

4Marinate shrimp in 3 cups sauce for 2 hours. Discard marinade.

5Thread shrimp onto 6-inch bamboo skewers.

6Broil kebabs 5–6 minutes on each side or until shrimp is cooked.

7Heat remaining sauce and serve warm with kebabs for dipping.
