Whole Wheat Fettuccine with Cilantro Alfredo

Olive oil -- 1 tbsp

Onion, yellow, diced -- 3.5 cup

Zucchini, diced -- 1 qt

Corn cob, frozen -- 1.5 lb

Chili pepper, Jalapeño, chopped -- 2 tbsp

Minor's Roasted Garlic Flavor Concentrate Gluten Free 6 x 1 pound -- 2 tsp

Trio Alfredo Sauce Mix 8 x 16 ounces -- 16 oz

Water -- 2 qt

Fettuccini, whole wheat -- 18 oz

Cilantro -- 0.5 cup
Preparation

1Heat Water in a large sauté pan over medium high heat. Add the onions, zucchini, corn, jalapeño, and garlic. Cook till vegetables are tender, about 5 minutes. Reserve hot.

2Make the Alfredo Sauce with the Water according to the package directions, hold warm.

3Cook the fettuccini in a large pot of boiling Water until tender, about 10 minutes, drain, reserve.

4Mix together the vegetables, Alfredo Sauce, fettuccini, and the cilantro.

5Serve 11 ½ oz per serving.
