Whole Wheat Fettuccine with Cilantro Alfredo

Ingredients
  • Olive oil -- 1 tbsp
  • Onion, yellow, diced -- 3.5 cup
  • Zucchini, diced -- 1 qt
  • Corn cob, frozen -- 1.5 lb
  • Chili pepper, Jalapeño, chopped -- 2 tbsp
  • Minor's Roasted Garlic Flavor Concentrate Gluten Free 6 x 1 pound -- 2 tsp
  • Trio Alfredo Sauce Mix 8 x 16 ounces -- 16 oz
  • Water -- 2 qt
  • Fettuccini, whole wheat -- 18 oz
  • Cilantro -- 0.5 cup
Preparation

    Heat Water in a large sauté pan over medium high heat. Add the onions, zucchini, corn, jalapeño, and garlic. Cook till vegetables are tender, about 5 minutes. Reserve hot.

    Make the Alfredo Sauce with the Water according to the package directions, hold warm.

    Cook the fettuccini in a large pot of boiling Water until tender, about 10 minutes, drain, reserve.

    Mix together the vegetables, Alfredo Sauce, fettuccini, and the cilantro.

    Serve 11 ½ oz per serving.
