Young Jackfruit Stir-Fry
Ingredients

Oil, coconut, 1/4 cup -- 2 fl.oz

Jackfruit, canned, syrup pack, drained, cooked, small pieces, 4 cups -- 16 oz

Red onion, sliced, 1/2 cup -- 2 oz

Garlic, minced -- 2 tsp

Ginger, minced -- 2 tsp

Red bell pepper, medium diced, 1/2 cup -- 2.5 oz

Green pea, cooked, 1/2 cup -- 2 oz

Carrot, shredded, 1/4 cup -- 1 oz

Cumin, ground -- 2 g

Turmeric, ground -- 2 g

Long green onion, chopped, 1/4 cup -- 0.5 oz

Maggi Seasoning -- 0.5 fl.oz
Preparation

1Heat coconut oil over high heat. Add jackfruit and cook, stirring only occasionally, until jackfruit is golden brown. Remove and reserve, leaving excess oil in pan.

2Use excess oil from jackfruit, or add a tablespoon more if necessary, and sauté onions, garlic, and ginger until aromatic- about 15 seconds.

3Add red pepper, peas, carrots, cumin and turmeric. Cook for 1 minute.

4Stir in jackfruit and green onions. Season with Maggi Seasoning. Transfer to a serving bowl.

5Garnish with sliced jalapeños.
